Blackened Rockfish with Jalapeño Cilantro Slaw

Quite possibly the best meal I have ever eaten. There is nothing that I love more than fresh Alaskan rockfish. I love it even more than Copper River sockeye–that’s saying a lot. Blacken your perfectly cooked fish, roast some yummy corn, then add the slaw. Perfection when served with a lime, cilantro, and/or jalapeno.

  • 1 cup sour cream
  • 3 Tbsp mayo
  • 2-3 cloves garlic
  • 1 cup fresh cilantro
  • 1/2 tsp sugar honey or agave syrup work as well
  • 2-3 jalapeno peppers–remove seeds for less heat
  • Juice of 1 large lime
  • 1/4 tsp salt adjust to taste
  • 1 Bag shredded cabbage or 4-5 cups fresh cabbage
