Swedish Pancakes, Sandwich, and King Crab...

I firmly believe that one's food choices on New Year's Day are indicative of the year to come.  Excellent food choices lead to an excellent year.  Lackluster or poor food choice lead to...well, you get where I am going with this.For 2018, I started with Swedish pancakes and boysenberry syrup.  For lunch, a perfect sandwich with fresh bread, turkey, baby greens, and havarti cheese.  For dinner, King crab, mashed potatoes, black eyed peas, and cornbread.  And ice cream for dessert of course. A day's worth of perfection if I do say so myself.King crab's place on my list of great foods to start the new year needs no explanation. And a nothing really beats a good sandwich. But You might be thinking, Swedish pancakes!?!? Really?Yes.Swedish pancakes are little dreams from heaven. What other food can you say, "Oh, I'll have 10 of those?" and not feel completely guilty? Even though they are extremely thin, they pack a punch of flavor. To me, they are like a thin sourdough pancake. I love that they don't rise and that they aren't rich. I also love their almost doughy texture...and that you can literally eat a whole one in a single bite. Top with a dash a butter and a touch of warm boysenberry syrup and you are in for a mouthful of deliciousness.Our family's Swedish pancake recipe comes straight from the age-old Betty Crocker cookbook.
